In a skillet on medium heat, add minced garlic and ginger; sauté for 30 seconds until fragrant.
Stir in pineapple chunks, pineapple juice, wine soy sauce, brown sugar, and vinegar. Simmer for 2–3 minutes, or longer if you like a thicker sauce. (You can also add a pinch of corn starch for thickening.)
Lightly puree with an immersion blender. You still want there to be some texture to the sauce.

Note: We enjoy this sauce over lightly sauteed pork chops. You can finish them by covering them with the pineapple sauce.
