Broiled Artichoke for 2

Ingredients

  • 2 tender  globe artichokes  stems trimmed to 1-inch, bottom row of leaves removed
  • 2/3 cup   lemon juice
  • 1/3 cup   Messina Hof white wine
  • 1/4 cup   olive oil
  • 1 tsp   minced garlic
  • 1/2 tsp   salt
  • 1/4  tsp  pepper

Our favorite dipping sauce

  • ½ cup   sour cream
  • 1/2 cup   Duke's mayonnaise
  • 2 tbsp   lemon juice mixture
  • 1  tsp  parsley or thyme  fresh minced
  • salt and pepper  to taste

Instructions

  • Split artichokes in half and boil in salted water until tender – about 25 minutes.
  • Remove choke from artichokes and dip cut side down in lemon juice, wine, olive oil, salt and pepper mixture.
  • Place cut side up on an oven proof pan.
  • Set under broiler for 10 minutes or until edges are toasted brown.
  • Turn cut side down on pan, brush with lemon juice mixture, and return to broiler for 5 minutes.
  • Serve cut side up with dipping sauce of choice.
